Peanut Butter Cookies

You guys, it’s Valentine’s Day.  But, more importantly, Girl Scout cookie delivery day.  #SamoasAreTheBest because they are.

There were a lot of neat-o things that happened today.  One, I got a Valentine’s present, not from Fred from someone else including this cute cat mug and some peanut M&Ms.  YES!

Two, as I mentioned above, Girl Scout cookie delivery day!  Three, yesterday was Denise’s birthday so today we celebrated with cake.  Chocolate cake!  Four, Jimmy John’s delivered sample sandwiches!  They do this sometimes just to remind us, “hey! we’re right down the street when you get hungry!”  Sweet!  Five, Fred got me delicious chocolate!

Where can I buy just one grapefruit spoon?  Because I love a grapefruit and it’s annoying to use a knife and a regular spoon.

Anyway, back to this post about pb cookies.

Peanut Butter Cookies:
3/4 cup creamy peanut butter1/2 cup shortening
1 1/4 cups firmly packed light brown sugar
3 Tablespoons milk
1Tablespoon vanilla
1 egg
1 3/4 cups flour
3/4 teaspoon baking soda
3/4 teaspoon salt

Preheat the oven to 375.  Then in a large bowl, combine peanut butter, shortening, brown sugar, milk and vanilla until creamy.  Add the egg until just blended.  In another bowl, combine the flour, baking soda and salt and add to the creamed mixture.  Mix until combined.  Then make little round balls of pb dough and place on a baking sheet.  Then use the back of a fork to press down slightly and make a cute little criss-cross pattern.  Bake 7-8 minutes or until set and just beginning to brown.  Then transfer to a wire rack or paper towel and cool the rest of the way.  Then try not to eat 10 in one sitting.  Delightful!
