Molasses Cookies

THERE IS A FINDING BIGFOOT MARATHON ON RIGHT NOW WITH A TWO-HOUR EPISODE WHERE THEY GO TO NEPAL TO SEARCH FOR THE YETI!  While I would be content watching this all day, Freddy would object.  Today is football day!  So we’ve been flipping back and forth.  Which is fine.  I can see how you could only watch them not find bigfoot so many times.

I digress.  I love a molasses cookie.  And this one is just perfect.  It’s not too molasses-ie.  It’s soft and chewy and delightful.  These are also from Martha.  Thanks Martha!  We made these on cookie baking day.  They are also super easy to throw together.

Molasses Cookies:
2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups sugar
3/4 cup unsalted butter softened
1 egg
1/4 cup molasses

Preheat oven to 350.  Then, in a medium bowl combine flour, baking soda, cinnamon, nutmeg and salt.  In a small bowl put 1/2 cup sugar and set aside.  Then in a larger bowl blend butter and remaining cup of sugar until combined.  Then mix in the egg and the molasses until combined.  After that is done, slowly add the dry ingredients until a soft dough forms.  Once the dough is done, roll bits into 1″ ish balls and then roll the balls in the sugar you set aside in the little bowl.  Place on a cookie sheet about 3″ apart because these babies expand.  Bake 10-15 minutes.  Cool for a minute on the tray and then remove to cool completely on paper towels or those rack things that fancy bakers have.
