It’s Saturday. That means; Fred’s working, college football and I’m on my own for breakfast. I usually opt for something really simple – leftovers from last nights dinner, cereal, oatmeal, eggs with cheese… But sometimes I try just a teeny bit harder. We’re running low on pretty much everything in the fridge so I had to do some scrounging. We have eggs, great! A tiny bit of cheese, some sour cream, taco sauce, 2.5 flour tortillas and a beautiful purple heirloom tomato. All the things I need to make breakfast tacos!
So easy and so delicious! In the tortilla shells, layer sliced tomatoes, shredded colby jack cheese, scrambled eggs, sour cream and taco sauce. Adding sausage or bacon would also be delightful, I just didn’t have any!
